The Gastronomic Laboratory, otherwise known as the kitchen, transforms these into simple yet wonderful dishes. With ingredients this good, little needs to be done in the kitchen to produce wonderful food.
Since opening its doors back in late 2005, Palazzo Santa Rosa has become the most talked about restaurant in Malta. It is the only Maltese restaurant that has ever been reviewed by Michelin. It is also the most talked about restaurant on the island.
My maternal grandfather, Philip, was a seasoned cook, as were my two paternal aunts Cella and Jane. My mother would also produce fine fare at her many elegant dinner parties. However, it was my husband John’s family, who really inspired me to develop my somewhat restricted culinary skills when still in my twenties.
In the mid 1980s, my friend Lucinda Stellini and I started a cottage industry from the convenience of our own kitchens, which we called No Frills Frozen Foods - cooking on order for friends.
Soon after the local Round Table association asked Jenny Scicluna and myself to produce a small cookbook, which we entitled Specialities For Your Table, a collaboration of different recipes and illustrations from the various Round Table wives, which proved to be a huge success.
I also helped produce The Cancer Prevention and Care Cookbook.
In 2003, I published my first solo book: 25 Years in a Maltese Kitchen. I began to travel and contribute to both local and international media in my capacity as a passionate cook living in Malta.
In February 2010, I published my second book: Pippa’s Festa – a Celebration of Food in Malta, which in March 2011 won an International award – The GOURMAND WORLD COOKBOOK AWARD – FIRST PRIZE IN THE CATEGORY FOR THE BEST ENTERTAINING BOOK IN THE WORLD !
I love to host people in my kitchen and teach them how to cook and encourage them to develop a passion for all things edible.
I continue to develop my culinary skills, forever trying out new recipes, and perfecting old favourites, which I love to share with my family and friends around the table in our garden.

“Klabb tat-Tisjir” (Cookery Club)
In May, 1976, the “Klabb tat-Tisjir” (Cookery Club) was founded. Situated in Malta’s capital of Valletta, the club consists of lecture rooms, as well as its own outlet.
A number of books have been published by the club, covering various food-related topics; from Maltese cuisine, to recipes for diabetics. Klabb tat-Tisjir has also issued a series of original recipe cards – these laminated, easy-to-clean cards, each feature a recipe, and are a simple and convenient way for the busy house-wife to vary her daily menus.

Rainer Mitze Koch-College befindet sich in einem historischen Maltesischen Gebäude. In diesen phantastischen Räumlichkeiten wird die traditionelle Maltesische Küche präsentiert.
Rainer Mitze geht neue Wege und wird in seinen Kochkursen die "Neue Maltesische Küche" vorstellen. Diese Kochkurse können für private oder geschäftliche Events gebucht werden.
Sein neustes Kochbuch wird ebenfalls den Titel "Neue Maltesische Küche" tragen und wurde in Englisch und Deutsch gedruckt.
Alle Kochkurse sind zum selber mitkochen und genießen.
Zu den Kochkursen werden ausschließlich Maltesische Weine, Kinnie, also Maltesische Spezialitäten serviert. Herr Mitze benutzt nur Produkte, die auf Malta angebaut werden. In seiner Kochschule können Sie im Gourmetshop Maltesische Produkte kaufen und natürlich auch sein Kochbuch.
